I have installed a very basic 2x 12 volt battery for a 1000w inverter system. There are two outlets that I have wired to work from the batteries. I have plugged in my tester and it states I have an open ground. I have a ground wire running from the inverter to the frame of the RV and the ground running to the two outlets. What have I missed?? (Yes I have installed breakers / surge protectors as stated in one of Ray's
    videos.)

This would be normal as I'm guessing your inverter like many uses a so-called floating ground output, the same thing happens when you do a test on the output of most inverter generators.
Basically, the inverter being meant for mobile applications like on RVs and boats doesn't get grounded to earth ground. It doesn't hurt anything unless you start connecting it to the shore power at the same time, in that case, you need to install a transfer switch to avoid damage to the inverter.
If the inverter is only powering its own specific outlets then no worries.
