Using a 2 KW Champion Generator with a RV with a 30 amp shore cord.
I have an RV with the standard 3 prong 30 Amp cord, which I normally use to plug-in to shore power.
I recently got a Champion 2 KW generator that has two 20 Amp plugin outlets. I also picked up a simple CAMCO adapter that fits on the end of 30 amp shore power cord from the RV, with a plug on the other side that fits the 20 amp outlet on the generator.
Is this safe to use? I realize the generator could only supply 15-20 amps, but is it safe to hook it up using the adapter and the shore power cable and use the 15-20 amps in the RV?

Yes, safe. One note, if you have an EMS/surge protector it may detect the open ground from your generator (small portable generators do not bond neutral and ground the way shore power should be) and not allow power to pass through to the coach.
I use one of these. Just plug it into one of the 120v outlets on the generator and use the other. It bridges the neutral and ground inside the plug.

I made my own from an old three prong plug. Just jumper neutral to ground.
